Delicious Hearty Soups for Winter

Once the evenings start drawing in and there’s a chill in the air there’s nothing more comforting than a steaming bowl of hot soup. Of course you can buy them ready made from the supermarket or order in from your favourite restaurant but for a nutritious, delicious and hearty soup there’s nothing better than straight off the hob and filled with love.

The great thing about soup is they’re pretty hard to mess up and you can throw in anything that needs to be used up but here we’ve listed the most delicious, and easy soups to keep you warm on a cold winter’s night:

Herby Tomato Soup

Everyone loves tomato soup and this one is a great crowd pleaser

Ingredients:

6 good quality fresh, or organic tinned tomatoes, quartered

Glug of olive oil

4 cloves of garlic

Handful of ripped basil

Pinch of oregano/mixed herbs, salt & pepper to taste

1 can of coconut milk or vegetable stock to keep it light

Method:

Sautee the garlic and tomatoes until soft and then add the rest of the ingredients and bring to a simmer for around 15 minutes. Blend and serve, simple!

Roasted Winter Vegetable Soup

This soup is great for using up any leftover veggies that are going soft in your fridge

Ingredients:

1kg mixed vegetables (carrots, potatoes, peppers, cauliflower etc)

Glug of olive oil

1 pint vegetable stock

2 cloves of garlic

4 springs rosemary or preferred herbs spices,

Pinch of salt & pepper to taste

Method:

Place vegetables with olive oil and garlic in a roasting tin and place in an oven at 200C for around 30-40 minutes, turning throughout. When done, place in a saucepan with the stock and herbs and simmer for around 10 minutes and then blend.

Broccoli & Stilton Soup

This soup is packed with flavour and high in nutrients, very filling and an ideal lunch

Ingredients:

Glug of olive oil

1 head of broccoli

1 leek

1 onion

1 stick of celery

1 medium potato

Pint of vegetable stock

140g stilton

Pinch of salt and pepper

Method:

Lightly fry off the onion in olive oil until softened and then add the celery, potato and leek. Cover with stock and add the broccoli, simmer until soft and then crumble in the stilton and salt & pepper and then blend.

Lightly Spiced Minestrone Soup

This soup is very filling so great for a hearty dinner served with crusty bread

Ingredients:

Glug of olive oil

1 onion

1kg of vegetables (potato, leek, cauliflower, broccoli, carrots etc)

1 tin of organic tomatoes

2 tsp of tomato puree

1 pint of vegetable stock

4 cloves of garlic

1 tin of beans (broad, cannelini, pinto)

Handful of orzo pasta

Pinch of mixed herbs, chilli flakes and salt & pepper to taste

Method:

Sweat down the onion and garlic in olive oil then add the stock, tomatoes and all the vegetables, simmer until soft for around 15 minutes. Add the beans, pasta, herbs, salt and pepper and simmer until the pasta is cooked.
