Sometimes cooking can be a real chore and with all the options available for delivery it’s all too easy to click a few buttons and have your dinner delivered to your door but what if you could knock up something healthy and delicious in a matter of minutes?
Batch cooking can be quite a lot of work and sometimes your body is craving fresh food and with these simple recipes you have can go from hob to table in the time it takes to order a takeaway.
Spicy chicken stir fry
Ingredients:
Glug of olive oil
2 chicken breasts
1 packet of egg/rice/protein noodles or rice
Thinly sliced carrot, broccoli, onion, cabbage, sugar snap peas, baby corn, red pepper or whatever vegetables you have to hand
Soy sauce, garlic paste, honey and chilli, to taste
Method:
This one couldn’t be easier, simply cook the chicken in olive oil until lightly browned, add all the vegetables and stir in the soy sauce, garlic paste, honey and chilli and then when all the vegetables are softened throw in the noodles
Moroccan lamb meatballs with couscous
Ingredients:
500g lamb mince
3 cloves of garlic
1 egg, lightly beaten
Tsp of mint, paprika, mixed herbs and salt & pepper
300g couscous
400ml vegetable stock
Method:
Combine the garlic, lamb, eggs and spices in a bowl and shape into equal sized balls and fry until cooked. Pour the vegetable stock over the couscous leave for 10 minutes whilst it cooks through and then and fluff with a fork and serve with a salad and houmus.
Thai salmon with rice and pea salad
Ingredients:
2 salmon fillets
2 tsp red Thai curry sauce
100g of rice
Handful of cooked peas, salad leaves, tomatoes and a basic dressing of olive oil and balsamic vinegar
Method:
Cook the salmon in the oven at 200C for 15 minutes with the Thai paste lightly spread over the top until cooked through, cook the rice until ready and then assemble the salad of mixed leaves, peas, tomatoes with a dressing of olive oil and balsamic vinegar
Creamy chicken curry
Ingredients:
Glug of olive oil
2 chicken breasts
1 onion
half a can of coconut milk
Half a can of tomatoes
Tsp of curry powder, garlic, cumin, paprika and salt & pepper taste
100g of rice
Method:
Cook the chicken in olive oil and all the spices, add in the tomatoes and coconut milk and simmer until thickened. Serve over rice and/or salad. This dish also freezes well spo is handy to keep for when you’re feeling lazy and just want to warm something up.
Ham and vegetable frittata
Ingredients:
Glug of olive oil
Half an onion
Handful of ham, peas, broccoli, pepper, spinach and cheese
4 eggs
Salt & pepper to taste
Method:
Whisk the eggs and set aside, adding salt & pepper. Softened the onion in olive oil and add the vegetables, cover the mixture with the eggs until a crust starts to form and sprinkle on the cheese. Add to the oven at 200c for 15 minutes until cooked through. Serve with a fresh, crunchy salad.
